Low Fat Vegetarian Chili

Ingredients
1teaspoonolive oil
2eachonions, chopped
2eachgarlic, cloves, minced
56oztomatoes, canned or 3lb fresh
15 1/2ozred kidney beans
15ozwhite kidney beans
15ozchickpeas
1 1/2cupcelery, chopped
1eachgreen pepper, chopped
3tablespoonlime, or 2 tb lemon juice
1tablespoonchili powder
1 1/2teaspoonoregano
1 1/2teaspooncumin
1/4teaspooncinnamon
12ozbeer, light
1peanuts, dry roasted
1cheddar cheese, shredded

Directions:

In a large pot, heat oil and saute onions and garlic until soft. Add all ingredients except beer, peanuts and cheddar cheese. Cover and simmer 1 1/2 hours. Add beer and simmer uncovered for 30 minutes. Add handful of peanuts and sprinkle cheese on each serving.
