Healthy Garden Quiche

1 clove garlic -- finely chopped

1/2 cup chopped onions

1/2 cup sliced fresh mushrooms

1 tablespoon diet margarine

8 slices Lite cheese slices -- cut up

2 tablespoons flour

1 cup egg product -- (no cholesterol)

1 cup skim milk

1/2 cup shredded carrots

1/4 teaspoon Italian seasoning

In saucepan, cook onion, garlic, and mushrooms in margarine. In bowl, toss cut up cheese pieces with flour. Add onion mixture and remaining ingredients. Mix c arefully. Pour into lightly greased 9 inch pie plate. Bake in preheated 350 deg ree oven for 45 minutes or until set. Refrigerate leftovers. Recipe from "One M illion Recipes CD"
