Jalapeno Rice

Jalapeno Rice

Ingredients
 

  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, chopped
  • 1 medium onion, chopped
  • 2 teaspoon chili powder
  • 2 jalapeno peppers, chopped
  • 2 cups rice
  • 1 14-oz can stewed tomatos
  • 1 14-oz can kidney beans
  • 1/2 cup salsa
  • 1 14-oz can garbanzo beans

Preparation
 



In a large pot, saute chopped vegetables and garlic until golden.
Add chili powder and stir.
Then add the rest of the ingredients and simmer on low until all the liquid is absorbed.
This should take about 50-60 minutes.
