Blueberry Orange Muffins

Ingredients
 

1 3/4 cup all-purpose flour
2/3 cup packed brown
1 sugar
1 tbsp baking powder
1 tbsp grated orange rind
1 cup milk
2 eggs
3 tbsp butter, melted
1 tsp vanilla
1 cup blueberries

Preparation
 
In bowl, stir together flour, sugar, baking powder and orange rind.
Whisk milk, eggs, butter and vanilla; stir into flour mixture just
until blended. Fold in blueberries. Spoon into lightly greased muffin
tins, filling three-quarters full. Bake in 400 degree F (200 C) oven
for 20 to 25 minutes or until golden and firm to the touch.

Makes 12 muffins.

Per muffin: about 165 calories, 4 g protein, 4 g fat,
28 g carbohydrate.

Boston Baked Brown Bread
