Chicken Marengo
2 1/2 lb Chicken 1 ts Salt 1 ds Pepper 4 tb Olive oil 1 ea Onion, chopped 1/2 ea Garlic clove, minced 1/2 c Tomatoes, chopped 1/4 c Sherry 2 tb Flour Cut chicken into pieces; Sprinkle with salt, pepper and flour and brown in oil. Set aside. Saute` onions and garlic in same pan. Add chicken and rest of ingredients, cover and simmer until tender (30-40 minutes). White wine can be used for sherry. ----- |
