Bbq Pork Sandwiches Wtih Five Vegetable Slaw

Ingredients
 

1/4 cup plus 2 tablespoons dark mola
1/3 cup cider vinegar
1/4 cup tomato paste
4 large garlic cloves, minced
1 tsp cumin
1/4 tsp cayenne pepper, or to taste
1/2 tsp paprika
1/3 tsp coriander
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 1/2 lb boneless pork shoulder, 2 in
2 bay leaves

SOFT, SESAMETOPPED BUNS FIVEV

5 cup green cabbage, finely shredd
1/2 cup red bell pepper, thinly slic
1/2 cup green bell pepper, thinly sl
1/2 medium cucumber, thinly slic
3 scallions, thinly sliced
1/3 cup mayonnaise
1 tbsp cider vinegar
1/4 tsp salt
1/4 tsp freshly ground black pepper
