Pina Colada Fool

Ingredients
 

1 cup drained unsweetened crushed pineapp, le
1 1/2 cup whipping cream
1/2 cup sweetened shredded coconut
1 tbsp coconut liqueur or rum (opt)
1 mint sprigs (opt)

Preparation
 
In blender or food processor, puree half of the pineapple; add to
remaining pineapple. In separate bowl, whip cream; fold in
pineapple, coconut and coconut liqueur (if using).

Divide among 6 long stemmed glasses. Chill for 1 hour. Garnish with
