Black Bean Salsa

Black Bean Salsa


  • 1/2 teaspoon salt
  • 1 cup tomato
  • 2 15 oz cans black beans. Drained and rinsed.
  • 1 16 oz can white shoe peg corn. Drained.
  • 6 tablespoon lime juice
  • 6 tablespoon olive oil
  • 1 1/2 teaspoon ground cumin
  • 1/2 cup red onion. Chopped fine.
  • 1/4 cup fresh cilantro

I use my food processor for the tomatoes,
cilantro, and the red onions because I am lazy.
Combine all but the tomatoes until you are ready
to serve it, then add a little more lime juice.
This is really good with lime flavored chips.

Moms Special Hummus
Drain garbanzo beans, saving liquid. Place beans and other ingredients in blender or food processor. Blend until smooth, adding 1-2 tablespoon of saved liquid if necessary. Thin to desired consistency. Best if refrigerated several hours or overnight to (Upload by user)

Yummy Lemon Tahini Dressing

Garlic Dip

Meatless Taco Dip
Cook Boca crumbles as directed on package. Add taco seasoning and 1/4 cup water. Cook for approx. 15 minutes. When finished cooking meat mixture put in a casserole dish. Spread vegetarian refried beans over meat mixture. Top with grated vegan cheese (Upload by user)

Mashed Cucumber Pesto
Peel the cucumber. Chop it up very fine. Mash it up with a masher. When you mash it, do it firmly but with small controlled gestures, it splatters easily. Mash as much as possible. If it is not fully mashed, mash it up more after its cooked.
