Kellis Tempeh Fajitas

Kellis Tempeh Fajitas

Ingredients
 

  • 1 package of tempeh, cut in strips
  • 1 medium onion
  • 1 large green or red bell pepper
  • 1 package of your favorite fajita seasoning mix (most are vegan)
  • 1 package of soft tortillas
  • toppings as desired (salsa, tofu sour "cream," soy cheese, etc.

Preparation
 



Prepare fajita seasoning mix as directed on package, most
call for oil and vinegar. Place tempeh strips into mix and
stir gently to coat. Set aside to marinate.


Cut onion and pepper into strips and saute over medium-high
heat until softened, but not mushy. Add mushrooms or other
veggies if you like!


Pour tempeh and marinade over veggies and mix gently to
prevent tempeh from breaking up. Cook until tempeh is
heated through and all veggies are coated with marinade.


Portion tempeh mixture onto warmed tortillas and add your
favorite toppings! Makes about 8 fajitas.
