Banana Bread Muffins

Ingredients
 
  • 1 cup vegan sugar
  • 3 bananas
  • 1/2 cup Earth Balance vegan margarine
  • egg replacer for 3 eggs (I used Energy egg replacer)
  • 2 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon water or juice
  • vegan sugar for sprinkling

Preparation
 

For some reason I always seem to buymore bananas than I can eat before theygo really soft. This recipe is a greatway to use bananas that have kind oflost their raw eating appeal.

Put bananas in a bowl and mash, mash,mash. This works best, obviously, ifthey are really ripe. Add vegan sugar, EarthBalance, egg replacer and water/juice.Mix well. Add dry ingredients and mixjust to combine.

Pour into greased muffin cups, sprinklewith vegan sugar and bake at 350 for 10-15minutes.

Also, you can freeze this batter.

Banana-Pineapple Bread
Mix the dry ingredients, then mix in the wet ones. If the mixture is too dry, add some of the saved pineapple juice. Bake at 350 for about 45-60 minutes until the top is golden brown and a toothpick comes out nearly dry. (Upload by user)
