Salmon Ball

Salmon Ball

Ingredients
  1 (15 1/2 ounce) can Red Alaskan salmon,
well-drained, boned and skinned
8 ounces cream cheese, softened
1/4 teaspoon Liquid Smoke
1 tablespoon lemon juice
2 teaspoons grated onion
1 teaspoon horseradish
Chopped parsley or chopped pecans

Preparation
  Blend first 6 ingredients. Shape into a ball or pack into a mold lined with plastic wrap. Chill several hours or overnight. Unmold.

Before serving, coat with chopped nuts or parsley. Serve with crackers and garnish, if desired, with parsley, lemon wedges, black olives and Salmon Pinwheels. May be frozen.

Yields 1 1/2 cups and serves 24.

Smoked Salmon Rolls
Cut the salmon into strips about 1/2 inch wide and 2 inches long. Mix the cream cheese and fresh herbs together and spread on the salmon pieces. Roll the salmon around a piece of pickle and secure with a wooden pick. (Upload by user)

Spicy Cheese Log
Soften cream cheese; grate longhorn cheese. With strong sturdy spoon (wooden is nice), mix thoroughly until all melded together. Stir in Worcestershire and garlic; mix thoroughly. Divide mixture into four or five sections. Roll each section into the shape of a lo (Upload by user)

Sweet Potato Cheese Ball
Let cheese come to room temperature. Boil sweet potatoes in jackets until tender. Peel, mash and cool. Blend sweet potatoes and cream cheese. Add the remaining ingredients and mix thoroughly. Brown slightly sliced bacon and sliced onion in a little butter, let it cool down and place in pastry shell, add ground cheese, beat vigorosly eggs, cream, salt and pepper, pour in shell. Backe at 375? F for aprox. 35 min or until brown. (Upload by user)

Slice each egg in half lengthwise, removing egg yolk. Use egg yolks in another recipe. Cut avocado in half and remove seed. Peel and cube. The day before, peel the tomatoes by dipping in boiling water for 10 seconds then plunging into ice water. The skins will easily slip off. Caliente Marinated Olives
Combine all ingredients except cilantro in a saucepan; bring to a boil over medium heat. Reduce heat and simmer 5 minutes. Remove from heat; cool. Stir in chopped cilantro. Cover and chill at least 8 hours or up to one week. Yield: 2 1/2 cups. (Upload by user)

California Rolls
Spread cheese evenly over tortillas to within 1/4 inch of edges. Layer tomato, spinach, onion, oregano, basil alfalfa sprouts and turkey over 2/3 of each tortilla. Roll up and wrap in plastic wrap.
