Molasses Cake

Ingredients
 

  • 4 tablespoon sunflower oil
  • 1 1/2 tablespoon soy lecithin
  • 125 ml vegan brown sugar
  • Ener-G Egg Replacer for one egg
  • 125 ml each molasses and boiling water
  • 375 ml whole-wheat flour
  • 2 1/2 tablespoon grated fresh ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon each ground cloves and mace
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 125 ml dried currants or dates

Preparation
 



1. preheat oven (180C)


2. oil and flour loaf pan


3. combine oil, lecithin, vegan sugar in blender


4. add Ener-G Egg Replacer, molasses and boiling water *blend*


5. add the rest *blend*


6. bake for 50-55 minutes


*serve warm with vegan ice-cream*
