Low-Fat Red Beans And Rice (High Fiber)

Ingredients
1eachred kidney beans, 6 oz can
1cupwater
1/2cuppumpkin
1/4cuptomato sauce
3tablespoonchili sauce
1/8teaspoonoregano
1/8teaspoongarlic, minced
2cuprice, cooked, hot

Directions:

In large nonstick saucepan over high heat, combine all ingredients except rice. Bring to boil, boil for 1 minute and reduce heat to low. Simmer 30 minutes, adding water if needed. Stir occasionally. Serve over rice.

Makes 4 servings. Calories 157 Fat 1 g Fiber 6.2 g.
