Scott Welliver`s Washington Apple Cake

2 c Sugar

3 c Flour

1 ts Soda

1 ts Salt

1 ts Cinnamon

pn Nutmeg 1 1/2 c Oil 4 Eggs 1 ts Vanilla 3 c Apples, red; chopped (do not -peel) 1 c Walnuts; chopped 1 pt Cream, whipping; whipped Sugar, powdered; to taste -(for sweetening cream) In large bowl of mixer, sift together dry ingredients. With mixer on slowest speed, add oil. At medium speed, add eggs one at a time, beating well after each addition. Add vanilla. Stir in the apples and walnuts. Turn batter into a greased tub pan. Bake at 350F for 1 hour or until toothpick comes out clean. Cool 10 minutes in pan and turn out on plate. Serve with sweetened whipped cream. From: Scott Welliver, Episoft Systems -----
