Turkey Skillet Ratatouille

Ingredients
 

1 eggplant, small/pared
1 zucchini, small, diced
1 onion, halved/thinly sliced
1 garlic clove, minced
2 cup tomatoes, broken/w juice
1 salt & pepper to taste
1 1/2 tsp oregano
3 cup turkey, roasted/cubed

Preparation
 
Spray skillet with cooking spray. Combine all ingredients except
turkey. Cover and simmer 10 minutes, stirring frequently, until
vegetables are tender-crisp. Stir in cubed turkey, Cook and stir
uncovered until nearly all the liquid is evaporated and the turkey
cubes are white (about 3 to 4 minutes).
